These white chocolate popsicles with plum and star anise are a delicious twist on classic ice cream recipes, appealing to both kids and adults.

- For the plum mixture:
- 2.1 oz golden caster sugar
- 1 whole star anise
- 10.6 oz ripe plums (approximately 6-7), pitted and chopped
- Juice of ½ lemon
- For the white chocolate mixture:
- 5.3 oz quality white chocolate, finely chopped
- 2.5 oz condensed milk
- 6.8 fl oz whole milk
- 5 fl oz single cream
- ½ tsp vanilla extract
Preparation Method

- For the plum mixture, combine the sugar and ⅓ cup water in a medium saucepan. Heat while stirring until the sugar dissolves, then add the star anise. Bring to a boil, simmer for five minutes, and then mix in the plums. Reduce heat and simmer for five to ten minutes until the plums soften. Allow to cool and then remove the star anise.
- Blend the plum mixture in a small blender until smooth. Stir in the lemon juice. This can be prepared up to four days in advance and stored in the fridge.
- Melt the chocolate in a heatproof bowl. In a small saucepan, heat the condensed milk, milk, and cream over medium heat. Once boiling, pour the mixture over the chocolate. Let it sit for a minute, then mix in the vanilla extract until smooth. Cover and let cool, then whisk to combine and transfer to a jug.
- Prepare eight 150ml ice pop molds and wooden sticks (this mold set from Amazon includes sticks). Add a bit of the chocolate mixture to the bottom of each mold, followed by a tablespoon of the plum mixture. Continue layering with more chocolate and plum until filled. Use a skewer to gently swirl the contents for a marbled look. Freeze for 40 minutes, then insert the sticks and freeze for at least three hours until solid.
- If you're using non-silicone molds, dip the outside in hot water briefly to loosen the pops before pulling them out by the stick.
