1 cup superfine sugar

1 cup lilac blossoms, plus extra for garnish

½ cup blueberries

Cocktail Ingredients

Crushed ice, enough for each glass

1½ tbsp lilac syrup (prepared above)

1½ tbsp vodka, optional

Soda water to fill

Squeeze of lime juice

2 lime wedges

Preparation Instructions

1. Begin with the lilac syrup. Combine the sugar and ¾ cup of water in a saucepan. Heat gently until the sugar dissolves, then bring to a boil and let simmer for one minute. Stir in the lilac flowers and ½ cup of blueberries, lower the heat, and simmer for another 10 minutes. Remove from heat, let cool for 10 minutes, and strain through a fine sieve. Chill the syrup completely and store in the fridge for up to five days.

2. Prepare serving glasses by filling them with crushed ice. Add 1½ tablespoons of lilac syrup (and the optional vodka), diluting the mixture with soda water at a one-to-four ratio.


Garnish each drink with a squeeze of lime juice, lime wedges, a sprig of lilac, and a few extra blueberries for an attractive finish before serving.
